Tortillas de Patatas con Sofrito y Aioli
One of the signatures dishes of Spain, it has nothing to do with Mexican tortillas, but more with a frittata. A combination of potatoes, onions, and eggs, thick and rich and yummy, this dish can be eaten at any time, cold or hot, on its own or in a sandwich. Served with a side of sofrito and homemade aioli. Vegetarian, Vegan (hold the aioli).
